
Mexican fermented beverage for better intestinal protection

Fermented foods are becoming increasingly popular. They are useful for better protection of the intestinal flora. A refreshing fermented pineapple drink is popular. The drink comes from Mexico. The name of the drink is “tepache”. Chopped pineapple or pineapple peel is used. The fermentation process takes up to seven days. It takes a cup of brown sugar and 1 liter of water.
Preparation: Pineapple with peel cut into pieces. Or use only pineapple peel. Place the cut pieces in a glass jar. Drizzle with water containing sugar. Add a little cinnamon or cloves. Cover the jar with a clean cloth. Then tighten the jar with an elastic band. Leave for 4 days in a dark place. Strain the liquid. Pour the drink into a clean bottle and close the bottle with gauze. Keep the bottle in a dark place for another 2 days. Your tepache is ready to use.
