Today, many cheeses (Parmesan, Dorblu, Mozzarella, Roquefour, .. etc.) even expensive are no longer exotic or fashionable but useful. However, there are still many doubts about the use of cheese in cooking.

  1. Cheese contains a lot of calories – it is an accurate myth about cheese. However, almost all calcium is absorbed only when using low-fat types of cheese. Absorption can be enhanced with the addition of green herbs (coriander, parsley, myrrh) and nuts (for example, walnuts).
  2. Cheese is very greasy – this myth is not very true because people usually buy cheeses with 40 to 50% fat. Although this does not mean that cheeses contain exactly this percentage of fat. Be sure to read the composition of the cheese. The label says the amount of fat per dry matter content, which is actually a realistic number. Dry matter usually makes up 60 to 65% of the total mass. Water is 35 to 40% present in cheese. So 100 grams of cheese contains 60 to 65 grams of dry ingredients while fat is present in only 30 to 32.5%. So in a word an adult can eat 200 to 250 grams of such cheese a week.
  3. The best cheese is low-fat cheese – it is a controversial myth because cheeses with 18 to 20% fat (sheep cheese, etc.) are considered cheeses for dietary nutrition. But these are salted cheeses that mature in a concentrated solution and absorb a lot of salt. Therefore, they are not recommended for people with hypertension, obese people, with inflammatory processes of the kidneys, bladder stones, ulcers and gastritis with increased acid, bronchial asthma. If you soak this cheese in cold water — then you will be able to eat it in smaller quantities.
  4. Goat cheese is more useful than cow’s cheese – it is a partially true myth about cheese. Both types are the same in the amount of protein contained. Goat cheese contains several micro-elements that are absorbed by the body.
  5. Cheese can cause allergies – it is a true myth. In the process of cheese production, enzymes and fungi are used that can cause hives, ie digestive disorders, even bronchial asthma.
